One of the vet techs at the clinic has chickens. She offered me some eggs because she is having a surplus. Of course I said YES!

I saw on a homesteading site that eggs can be freeze dried and will last that way for 20 years. Basically scramble them , put them on a tray and freeze dry and they come out powdered.
How wonderful.
I'm reminded of a joke my sister Ann told - when the cost is high the new saying is "it cost an arm and an egg" :)
